Chardonnay is one of the flagship varieties of the Yarra Valley region. This wine was made from fruit grown on the Black Spur vineyard at Healesville is a classic example. Evident in this wine are fresh tropical fruit characters such as melon and nectarine which combine seamlessly with creamy cashew flavours. The textured palate is constructed by the winemaking actions. It is the lees stirring which contributes to the creaminess, while the oak lends spicy savoury flavours. Think: Prawn risotto.
